I was looking for a bag that would:
1 - be big enough to fit my Canon 20D, with a Canon EF-S 17-55mm f/2.8 and a Canon EF 70-200mm f/4L, plus a flash Canon 420EX and various, smaller accessories.
2 - let me carry the body with any lens attached inside the bag
3 - give me fast access to my equipment, to be ready for any shooting opportunity
4 - not hurt my back
I have found in this bag the perfect combination. I have enough room to carry my 20D with the 70-200mm attached, and all the rest. I have fast access to my camera. I can barely feel the weight of the bag and everything inside.
There are a couple of things that I wasn't expecting but made me really happy with my purchase: when you sling the bag around your shoulder, it stays snug against your hip (tip: always use the clever "tuck-away hip-belt"), and doesn't bounce around like other bags. You can kneel, bend over, crouch with your camera bag around your shoulder, and it "sticks" to your body, never gets in the way. It really gives you full use of both your hands (and you never have to re-adjust the bag strap on your shoulder). The second thing is that this bag offers an easy way to switch lenses: you can prepare the new lens inside the bag (remove the bottom lens cap), on your side, inside the bag, and be ready to switch the lens quickly, even if you're standing (again, the bag stays snug around your hip, and won't move around). This is really helpful since digital SLR's tend to gather dust on the sensor, and the faster you can switch the lens, the less your chance of getting dust is.
I personnally like to keep the bag around my shoulder during the whole shoot, and put the camera around the neck (on top of the bag strap). In this configuration, the bag and the rest of the equipment feels like it is not even there. I suffer from really bad back problems, and this is the first bag that I can keep on my back all day without any pain. I highly recommend it. I just shot a whole wedding in Las Vegas, and kept the bag on my back all day (from 9am to 7pm), took 1,000+ pictures, and did not feel any pain in my back.
I would still recommend to try different sizes at your local camera store, to see which size works best for you (Velocity 7,8,9?). The "8" is a great fit for me. One more thing: it may look big on the pictures, but it is so flat and stays so snug against your body that it is really inconspicuous, looks like a very discrete backpack, not like a camera bag, which is always good (it won't catch potential thieves' attention). This is the 10th bag that I'm trying, and it is by far my favorite.
The only downside is that there's not a whole lot of compartiments for flash cards and batteries (4 CF cards + 2 battery packs and the front pocket will be pretty much full).
